Ingredients:
1 lb bonesless skinless chicken breasts
1 lb package spaghetti noodles
1 (8 ounce) package cream cheese
1 small onion – chopped
1 small bell pepper – chopped
1 large beefsteak tomato – chopped
2 cups cheddar cheese – divided
 
instructions:
preheat the oven to 375 degrees. lightly spray a 9 x 13 casserole dish with cooking spray and set aside.
in a large stock pot, add the chicken breasts. cover them by several inches with water and season the water with salt/pepper to taste.
Bring to a boil and continue to cook until chicken is cooked through
Remove chicken and cut into bite sized pieces (when cooled of course)
bring the stock back to a boil and add the pasta. cook according to the package instructions to al dente. DO NOT OVERCOOK. Drain into a bowl and save the stock meanwhile, add the cream cheese to a small sauce pan. add in 2 ladle fulls of the reserved chicken broth to the pan and cook over medium heat. whisk until the mixture is smooth. set aside
in a large bowl, add the reserved hot noodles, reserved shredded chicken, onion, bell pepper and tomato pour in the cream cheese mixture.
add 1 cup of the cheddar cheese and 3/4 cup of the reserved chicken stock. toss until combined. you can add more stock if you don’t think it is moist enough. pour the mixture into the reserved 9 x 13 baking dish. top with remaining cheese can cooked covered for 30 minutes or until cheese is melted.

Ingredients:
1 package chicken tenderloins (about 10 strips-look for organic)
3 tablespoons lemon juice
2 tablespoons raw honey
1 tablespoon olive oil
3 garlic gloves, (minced)
2 teaspoons dried oregano
.
Directions:
Place chicken in a greased 13in x 9in baking dish. Combine the lemon juice, honey, oil, garlic, and oregano; pour over chicken. Bake, uncovered at 375 degrees for 45 min.

Makes 4 Servings

Ingredients:
2 chicken breasts, skinned, boned and cut into bite-sized pieces
1 Tablespoon extra virgin olive oil
1 1/2 teaspoons black pepper
1 teaspoon sea salt
2-3 garlic cloves, minced
1 1/2 teaspoons finely diced ginger
1/2 red pepper, diced
1/2 orange pepper, diced
1/2 cup green onion, chopped
1/2 cup julienned carrots
4 single-serve packages of Udon noodles
1/4 cup soy sauce
1 1/2 Tablespoons extra virgin olive oil (this is in addition to the previous 1 Tablespoon)
1 Tablespoon sesame oil
2-3 Tablespoons sesame seeds
2 Tablespoons honey

Directions:
Heat frying pan, wok or skillet to med-high heat and add the 1 Tablespoon of olive oil. Add the chicken, salt and pepper and cook for about 10-15 minutes (chicken should no longer be pink). Add the garlic, ginger, peppers, onions and carrots… stir and cook for 5 minutes. Add the noodles, soy sauce, the rest of the olive oil, sesame oil and seeds… Stir until well coated and cook for about 5 minutes. Drizzle honey over top, stir, serve and enjoy!

Low Carb Walnut MedleyLow Carb Walnut Cookies

Ingredients
2 ounces cream cheese, softened
2 tablespoons butter, softened
1/2 cup sugar substitute (called for 1 cup but I reduced)
1 large egg
1 teaspoon vanilla extract
1 cup almond flour
1⁄2 teaspoon baking soda
1⁄4 teaspoon salt
2 ounces chopped walnuts

Instructions:
1. Preheat oven to 375 degrees and line a sheet pan with parchment paper.
2. Using a stand or hand held mixer, add the cream cheese, butter, sugar substitute, egg and vanilla to the mixing bowl and beat on high until creamy and fluffy.
3. Add in the remaining ingredients and mix on medium until well blended.
4. Using a teaspoon or 1 ounce ice cream scoop, drop 16 evenly spaced cookies on the lined pan and bake for about 8-10 minutes. Let cool 10-15 minutes before serving.
Note: Press the cookies down into the parchment paper a little before baking for a crispier cookie.
