Taco Salad Low Carb!

2lbs. Lean Ground beef (may use ground turkey)
2 medium tomatoes
1 head of lettuce (you can use 1/2 a head of Iceberg & 1/2 head romaine)
Shredded iceberg… chopped romaine.
1/2 jar salsa (I used Tostitos medium)
1 Avocado chopped to your liking
1 bag Shredded Monetary Jack cheese
1 small can sliced black olives.
Sour Cream (optional)

Taco seasoning
1 Tbs Chili Powder
1/4 tsp Garlic powder
1/4 tsp onion powder
1/4 tsp crushed red pepper flakes
1/4 tsp dried oregano
1/2 tsp Paprika
1 1/2 tsp Ground Cumin
1 tsp sea salt
1tsp Black pepper
(Or you may use Pre packaged Taco seasoning)

Brown lean beef or turkey until cooked through and drain.
place back in fry pan and add taco seasoning and 1/2 cup of water and heat till mixed well about 10 minutes.
Place lettuce on plate or bowl top with tomatoes, Avocado, Olives. Salsa, Meat, and Cheese and a dollop of sour cream if desired.

Low Carb CheesecakeLow Carb Cheesecake Recipe

1 pkg (250 g or 8 oz)
cream cheese brick
2 eggs
2 tbsp unsweetened cocoa powder
2 tbsp unsweetened real whipped cream
1 tsp vanilla
5 pkts of stevia

Blend all together really well with hand mixer. Add more stevia if you like it sweeter.
Grease a pie plate and pour batter in.
Bake at 350 for about 20 minutes or less. (Check for doneness by inserting a fork)

Let cool before cutting into 8 slices. (Picture shows 1/12)
Top with whipping cream sweetened with stevia.

Approximately 120 calories and 7 g carbs/slice without whipped topping.

Bacon Wrapped Chicken Roll (Low Carb)

Bacon Wrapped Chicken RollLow carb!!!!


10-12 Piece Of Bacon
2 Chicken Breasts
Half a small onion Finely Diced
Half a cup of Grated Mozzarella Cheese
Half a cup of Diced Tomatoes
2oz Softened Cream Cheese
Good Handful of fresh Spinach
2 Tablespoons of Finely Chopped Cilantro
Salt and Pepper to taste

Pre-heat oven to 450F
Pound out the chicken breasts until thin enough to roll
Lay out the bacon flat barely overlapping
Place the Chicken on top
MIx the spinach, cilantro, tomatoes, mozzarella and onion together in a bowl.
Spread the cream cheese on the chicken breast and salt and pepper to taste
Place mixture from bowl onto middle of chicken breast
Careful roll up the chicken breast and use the bacon to secure in place
(if you wish to secure in place with wooden skewers please do)
Careful place completed roll into an cast iron skillet on a medium heat
Brown the bacon on all sides being careful when turning to avoid roll falling apart.
Place skillet in oven at 450F for 20 mins to complete cooking.
Remove from oven and allow to rest for 5 minutes before slicing.

4 tablespoons of cream cheese
1/4 cup mayonnaise
1/4 teaspoon sugar substitute ( I use Truvia)
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
1/8 teaspoon salt
6 hard-boiled eggs

In a bowl beat cream cheese until smooth.
Add mayo, sugar,onion powder,garlic powder, and salt..
Fold in eggs.
Sprinkle with paprika.
Cover and refrigerate for 1 hour.
Serve on lettuce leaves or with celery.

Caramel Berry Low Carb Muffins

Caramel Low Carb MuffinsCaramel Berry Low Carb Muffins

1/2 stick (4 tbs) Butter (melted)
1/2 cup Almond Meal
2-8oz packages Cream Cheese (softened)
1/2 cup Granulated Sweetener (I used Truvia)
1tsp Vanilla
2 large eggs
1/4 cup Sugar-Free Caramel syrup or flavor of choice
fruit (if desired)

1. Preheat your oven to 350F bake.
2. Grease or line a cupcake tin (you’ll need 12 spots)
3. Mix the melted butter in with the almond meal.
4. Press the almond meal mixture into the bottoms of the cupcake tins.
5. In stand mixer add the cream cheese, eggs, truvia, sugar-free syrup, and vanilla to the bowl and mix on medium speed until the mixture is smooth.
6. Once the mixture is smooth, evenly pour the mix into the cupcake tins, filling almost to the top. Press in fruit if adding some.
8. Bake in the oven for 15-17 minutes, I baked mine longer.
9. Let stand for 10 minutes before putting into the fridge for at least 30 minutes.
